Quick Healthy Snacks For You and Your Family

I’m in super NESTING mode over here! I’ve got a month to get the baby room, our house and my fridge stocked for our baby boy’s arrival! I’m planning on nursing and the one thing I remember is being SO THIRSTY all the time and SO HUNGRY! I’ve listed a few of the go-to snacks that I prep and throw in the fridge or freeze ahead of time. These snacks are also great if you’re always on the go, they’re healthier than pre-made sugar-packed snacks you buy at the store and they’re not baked.

Overnight Chocolate Chia Seed Pudding

This is a recipe I found on MinimalistBaker.com. I love her site and Instagram page! So inspiring and delicious looking. Her Overnight Chocolate Chia Seed Pudding is easy to make and delicious. Here’s my take on it:

Prep: Minimum 3 hours (because of the overnight part) but it takes 5 minutes to put all the ingredients together.

Chia Seed Pudding isn’t freezer friendly but will keep in the fridge for up to 5 days.

Ingredients
  • 1/4 C Cocoa powder, sifted
  • 3 – 5 Tbsp Honey or you can use Maple Syrup
  • 1/2 Tsp Cinnamon (optional)
  • Pinch of salt
  • 1/2 Tsp Vanilla Extract
  • 1 Can or 1 1/2 C of Coconut Milk or Almond Milk
  • 1/2 C Chia Seeds
Directions

In a medium-sized mixing bowl, sift cocoa powder. Start with 3 tablespoons of honey or maple syrup, add cinnamon, salt and coconut milk vanilla extract. Taste mixture. If you want it to be sweeter add more honey or maple syrup.

Add chia seeds. Mix and cover with a clean dish cloth and place in the fridge overnight or a minimum of 3 hours.

When you take it out of the fridge, mix it and feel free to add a bit more almond or coconut milk to give it a more pudding-like consistency.

You can keep it in a covered container in the fridge for up to 5 days.
